Lunch Pot Luck Ideas on the go
You don't always have to go out of your way to make something good for a pot luck, it is fine to cheat and buy something for the group. We've had the following items:
Fried Chicken
Chicken Wings
Chicken Salad from the deli

I make this a lot for pot lucks - Sloppy Joe
I'm a big beleiver in making something substantial for pot luck lunches at work. There is nothing more annoying than a table full of finger foods or appetizers. When I'm having lunch I want something substantial. That said, what is more annoying is that I end up spending $15 on a good dish while others routinely spend $3 on Soda or cheese and crackers.
This dish is always a huge hit:
I always make it the night before and let it heat in the crockpot in my office all morning and serve with hamburger buns.

MIL's Homemade Sloppy Joe
3+ lbs of browned ground beef
about a bottle of ketchup to coat the beef
a few sprinkles of
worsteshire to taste
a few sprinkles of yellow mustard
brown sugar to
taste
simmer for about 30 minutes.

What I made yesterday - Fruit and Yogurt Parfait/trifle
Yesterday we had a breakfast potluck. I didn't want to bring the normal bagels, donuts, and juice. But I don't have an oven at work or a lot of time in the morning. Here's what I made:

A layer of vanilla lowfat yogurt on the bottom
A layer of angel food cake (this last minute idea was a hit!)
A layer of thawed frozen berries (strawberries, blackberries, rasberries,
blueberries)
A layer of yogurt
A layer of berries
A dob of yogurt
